Russian Pancakes
Ingredients
  • 4 1/4 cups milk
  • 5 large eggs
  • 2 tablespoons white sugar
  • 1/3 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/8 teaspoon citric acid powder
  • 4 cups all-purpose flour
  • 3 tablespoons vegetable oil
  • 1 cup boiling water
  • 2/3 cup butter, divided
Instructions
1
Combine milk and eggs in a large bowl until they are fully incorporated and smooth. Add sugar and salt, mixing well to ensure an even distribution of these ingredients. Next, incorporate baking soda and citric acid into the mixture until they are fully absorbed.
2
Gradually add flour to the bowl, stirring constantly as you go. Once the mixture is smooth and free of lumps, add oil to give it a richer flavor.
3
Now, slowly pour in boiling water while continuously stirring the mixture. This will help to thin it out and create a smooth, watery consistency.
4
Allow the batter to rest for approximately 20 minutes, giving it time to thicken and become more manageable.
5
Heat a small frying pan over medium-high heat, adding 1 tablespoon of butter to the pan as it warms up. Remove the pan from the heat, then pour in a ladleful of batter while rotating your wrist to help it spread evenly across the bottom of the pan.
6
As you pour, tilt the pan slightly to ensure that the batter forms a circle and coats the bottom of the pan. The blini should be very thin, almost translucent.
7
Return the pan to the heat and cook the blini for 90 seconds. Use a spatula to carefully lift up the edge of the blini, checking if it's fully cooked by looking for golden edges and brown spots on the bottom surface.
8
Flip the blini over and cook for an additional 1 minute, ensuring that it's cooked to perfection.
9
Transfer the blini to a plate lined with a clean kitchen towel, then continue cooking the remaining batter in batches of 4 blini each, adding 1 tablespoon of butter to the pan as needed.
10
As you cook, stack the blinis on top of each other and cover them with a clean kitchen towel to keep them warm.
11
Once the blinis are cooked, spread your desired filling in the center of each one. To make a triangle shape, fold the blini 3 times over onto itself. Alternatively, you can fold up all 4 sides to create a small burrito-like shape.
