Russian Cabbage Pie

  • 1 small head cabbage, finely chopped
  • 3 hard-boiled eggs, peeled and chopped, or more to taste
  • 3 sprigs fresh dill, finely chopped, or to taste
  • salt to taste
  • 2 sheets yeasted puff pastry
  • 1 egg, beaten

Heat the butter in a large skillet over a relatively low heat setting, allowing it to melt and become smooth. Add the shredded cabbage and cook until it becomes tender but still retains its green color, taking approximately 30 minutes to achieve this. Remove the skillet from the heat source and let it sit for about 10-15 minutes to cool down.

Next, preheat your oven to a high temperature of 400 degrees Fahrenheit (200 degrees Celsius). This will ensure that the final product is cooked to perfection.

In a separate bowl, combine the cooled cabbage with diced hard-boiled eggs and chopped fresh dill. Add a pinch of salt to bring out the flavors.

Now, roll out one sheet of puff pastry and place it in a pie plate. Fill the pie plate with the cabbage mixture, leaving about an inch of space around the edge to allow for even cooking. Cover the filling with the second sheet of puff pastry and press the edges together to seal the pie.
