  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts
  • 1 cup flaked coconut
  • 2/3 cup packed brown sugar
  • 6 tablespoons butter
  • 1/4 cup cream

Combine flour, baking powder, soda, salt, and nuts in a small bowl; thoroughly blend the ingredients together.

In a separate mixing bowl, cream 1/4 cup of butter or margarine with white sugar until smooth; incorporate an egg and vanilla extract into the mixture, ensuring a well-combined result. Gradually add the dry ingredients to the creamed mixture in three stages, interspersing with the date mixture in two stages, commencing and concluding with the dry ingredients. Pour the batter into a greased 9 x 13 inch baking pan.

Bake in an oven preheated to 350 degrees F (175 degrees C) for 30 to 40 minutes, or until a wooden pick inserted into the cake comes out clean and free of any residue.

To prepare the Topping: Combine coconut, brown sugar, 6 tablespoons of butter, and a splash of cream in a small saucepan over medium heat. Bring the mixture to a boil for three minutes, stirring occasionally. Pour the warm topping over the cake and subject it to broiler heat until golden brown.
