- 3 egg yolks, beaten
- 1/2 pint milk
- 1/4 teaspoon salt
- 1/3 cup white sugar
- 1 pint heavy cream
- 1/4 cup rosewater

Combine the strawberries with a generous amount of sugar in a bowl; use a potato masher to crush them together until they're well blended. Place the mixture in the refrigerator for later use while you work on the rest of the recipe.

In a separate bowl, whisk together the egg yolks, milk, salt, and another 1/3 cup of sugar over medium heat in a saucepan. Carefully warm the mixture to 175 degrees F (80 degrees C), taking care not to let it boil; transfer the mixture to a chilled bowl and refrigerate until cooled, stirring occasionally. Once the mixture has cooled down, stir in some heavy cream, a few drops of rosewater, and the chilled strawberry mixture.
