  • 1/4 cup rose water
  • 3 saffron threads
  • 1 cup unsalted butter
  • 1 1/2 cups all-purpose flour

Combine sugar and water in a saucepan over high heat; bring to a rolling boil, stirring continuously until the sugar has fully incorporated and the mixture is translucent, approximately 5 minutes.

Add rosewater and saffron to the sugar mixture; cover the saucepan and take it off the heat source.

In a separate, larger saucepan, melt butter over low heat; gradually incorporate flour into the melted butter until a uniform, smooth consistency is achieved. Continue cooking, stirring frequently, until the mixture reaches a golden hue, taking around 5 to 10 additional minutes.

Gradually whisk the sugar mixture into the paste until a seamless blend is formed. Remove the saucepan from the heat source.

Pour the halva onto a plate or platter and create an even layer. Utilize the back of a spoon or knife to design a pattern on top of the halva. Cover with plastic wrap and refrigerate until set, for at least one hour.
