  • sea salt to taste
  • 1 lime, zested and juiced
  • 1/4 cup olive oil
  • 1/4 cup sherry wine
  • 3 sprigs rosemary, leaves stripped
  • 2 cloves garlic
  • 1/4 teaspoon cayenne pepper, or to taste
  • ground black pepper to taste

Collect all necessary ingredients beforehand.

Preheat your oven to the desired temperature of 400 degrees Fahrenheit (200 degrees Celsius). Cover a baking dish with aluminum foil to prevent mess.

Prepare the arctic char by sprinkling it generously with sea salt, placing it in the prepared baking dish, and adding a generous amount of lime zest on top.

In a food processor, blend together lime juice, olive oil, sherry, rosemary, and garlic until the garlic is finely minced.

Spread the blended mixture evenly over the fish, adding a pinch of cayenne pepper and black pepper for extra flavor.

Place the baking dish in the preheated oven and cook until the fish is tender and flakes easily with a fork, typically taking 12 to 15 minutes. During this time, baste the fish with its own juices every now and then to keep it moist. As soon as the fish is almost fully cooked, switch the oven to broil and cook for an additional 2 minutes, or until the top is nicely browned.
