- 7 teaspoons unflavored gelatin
- 2 1/3 cups white sugar
- 3 tablespoons strained fresh lemon juice
- 4 teaspoons rose water
- 2 drops red food coloring
- 1 tablespoon cornstarch, or as needed

Preheat your oven to 350 degrees F (175 degrees C).

The first step is to grease an 8-inch square baking dish with a generous amount of vegetable oil.

Next, prepare the gelatin mixture by placing 2/3 cup of water in a small bowl. Sprinkle unflavored gelatin on top and let it sit for 15 minutes, allowing the gelatin to soften.

Then, combine the remaining 1 cup of water, granulated sugar, and freshly squeezed lemon juice in a saucepan over medium heat. Bring the mixture to a boil, stirring constantly until the sugar has dissolved.

Increase the heat and bring the syrup to a boil, covered with a lid. Continue cooking for 3 minutes.

To monitor the syrup's temperature, attach a candy thermometer to the side of the saucepan. Cook the syrup until it reaches 238 degrees F (114 degrees C), a crucial temperature for achieving the perfect consistency, taking about 5 minutes.

Remove the saucepan from the heat and carefully stir in the softened gelatin mixture until it's fully dissolved. Mix in a few drops of rose water and red food coloring to give the dessert its distinctive flavor.

Then, pour the syrup mixture into the greased 8-inch square baking dish.

Allow the dessert to set at room temperature for about 4 hours, or until it has gelled. Cover the dish with plastic wrap and refrigerate for 8 hours to overnight.

Finally, cut the gelled mixture into 1-inch squares and dust them with cornstarch.
