Ingredients
- 2 1/4 pounds potatoes, scrubbed
- 3 tablespoons butter
- 1 teaspoon salt
- 2 tablespoons milk
Instructions
1
Fill a large container with water and immerse the potatoes, ensuring they are completely submerged.
2
Heat the water to its boiling point over a moderate-high flame and maintain this temperature for 15 minutes, or until the potatoes are tender enough to be pierced with a utensil.
3
Remove the potatoes from the water and refrigerate them overnight in order to chill.
4
Next, use a vegetable peeler to remove the outer layer of the potatoes and grate them into a large serving dish.
5
Melt the butter in a medium-sized cooking vessel over a moderate flame; add the grated potatoes and sprinkle with salt.
6
Use a spatula to shape the potato mixture into a round loaf, applying gentle pressure to form the desired shape.
7
Pour milk over the potato mixture and cover the cooking vessel with a lid.
8
Allow the potatoes to begin sizzling, which should occur within 5-10 minutes, and then reduce the heat to a low flame.
9
Continue cooking until a brown crust has formed on the bottom of the potato loaf, approximately 30 minutes.
10
Carefully lift the roesti out of the cooking vessel using a large plate and flip it over to serve.
