Rochester Meat Sauce
Ingredients
  • 1/2 pound ground beef
  • 1 1/4 cups water, plus more as needed
  • 1 tablespoon white vinegar
  • 1/2 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon ground thyme
  • 1/4 teaspoon ground cinnamon
Instructions
1
Cook ground beef in a large skillet over high heat until it reaches a dark brown color and has a crumbly texture, approximately 5 to 7 minutes. Remove excess fat from the skillet using a paper towel.
2
Transfer the cooked ground beef to a food processor and blend until it reaches a fine, almost powdery consistency.
3
Return the processed ground beef to the skillet and combine it with 1 1/4 cups of water, a splash of vinegar, a blend of spices including paprika, black pepper, chili powder, cayenne pepper, salt, allspice, cloves, cumin, thyme, and cinnamon. Heat the mixture over medium heat until it starts to bubble, then continue cooking for at least 30 minutes, periodically adding water as necessary to maintain a smooth, saucy texture.
