Roasted Yams with Marshmallows
Ingredients
  • 2 1/2 pounds yams
  • 2 tablespoons butter
  • 2 cups brown sugar
  • 1 cup orange juice
  • 1 teaspoon ground nutmeg
  • 3 cups marshmallows
Instructions
1
Preheat your oven to a high temperature of 400 degrees Fahrenheit, which is equivalent to 200 degrees Celsius.
2
Place the whole yams in the preheated oven and roast them until they are warm all the way through but still slightly firm to the touch, requiring about 35 to 40 minutes of cooking time. Let them rest and cool down.
3
Turn the oven's heat setting down to a moderate level of 350 degrees Fahrenheit, which is equivalent to 175 degrees Celsius.
4
In a large saucepan, melt the butter over medium heat on your stovetop. Combine the brown sugar, orange juice, and nutmeg with the melted butter in the saucepan, stirring constantly until the sugar has dissolved completely. Bring the mixture to a boil and then reduce the heat to low, allowing it to simmer until the liquid has thickened into a syrup-like consistency, taking around 10 to 15 minutes.
5
Once the yams have cooled down, remove their skin and cut them into small, manageable pieces. Arrange these pieces in a single layer at the bottom of a 13x9-inch baking dish.
6
Drizzle the syrup you created earlier over the yams, making sure they are evenly coated. Then, place the dish in the preheated oven and roast the yams until they are tender enough to be pierced with a fork, which should take about 35 minutes. Every now and then, open the oven door to spoon some of the syrup over the yams.
7
Finally, arrange marshmallows on top of the yams and continue baking them in the oven until they are puffed up and nicely browned, requiring an additional 10 minutes of cooking time.
