- 3 large sweet potatoes, peeled and cut in 1-inch cubes

Preheat your oven to a high temperature of 350 degrees Fahrenheit (or 175 degrees Celsius, if you prefer metric). To make things easier, cover your baking sheet with a layer of aluminum foil or parchment paper.

In a large bowl, combine olive oil, honey, fragrant rosemary leaves, salt, and a pinch of black pepper. Mix everything well until the sweet potato cubes are evenly coated with the delicious mixture. Using a slotted spoon, carefully transfer the sweet potato cubes to the prepared baking sheet, making sure they're in a single layer.

Place the sweet potato cubes in the preheated oven and let them cook until they're tender, which should take around 45 minutes. After that, increase the oven heat to a high temperature of 450 degrees Fahrenheit (or 230 degrees Celsius) and continue baking until they're nicely browned, taking another 15 minutes.
