Roasted Sweet Potato Hummus

  • 3 sweet potatoes
  • 1 (15 ounce) can garbanzo beans, drained (reserve liquid) and rinsed
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons tahini
  • 2 tablespoons lemon juice
  • 1/2 teaspoon lemon zest
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon ground coriander
  • 1/4 teaspoon ground white pepper
  • sea salt to taste

Heat your oven to its highest temperature setting, which is 400 degrees Fahrenheit or 200 degrees Celsius.

Using a fork, create numerous small holes all over the sweet potatoes to allow heat to penetrate evenly.

Time to roast those sweet potatoes in your preheated oven until they become tender and easily pierced with a fork, approximately 45 minutes; then let them sit for a while to cool down.

Cut the sweet potatoes in half lengthwise, exposing their inner flesh for future use.

Mash the garbanzo beans and olive oil together in a blender using short pulses, until you achieve your desired consistency.

Scoop out the soft flesh from the sweet potato peels and add it to the blender, blending everything together until well combined.

Add the tahini, lemon juice, lemon zest, cumin, coriander, white pepper, and sea salt to the mixture in the blender.

Blend everything together until you get a smooth, creamy hummus; if needed, add some of the reserved garbanzo bean liquid to achieve your desired consistency.
