Ingredients
- 1 tablespoon vegetable oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 6 cups canned kidney beans, drained
- 2 cups water
- 3 tablespoons soy sauce
- 3 tablespoons chili powder
- 4 teaspoons prepared mustard
- 2 teaspoons ground cumin
- 1 pinch cayenne pepper, or to taste
- 4 cups mashed cooked sweet potatoes
- 12 (10 inch) flour tortillas, warmed
- 8 ounces shredded Cheddar cheese
Instructions
1
Preheat the oven to its highest temperature setting, which is 350 degrees Fahrenheit. This will ensure that it reaches the desired heat level for baking.
2
Heat a sufficient amount of oil in a medium-sized skillet over high heat. Add the onion and garlic to the hot oil, stirring constantly until the onion becomes translucent.
3
Mash the beans into the mixture with the cooked onion. Gradually add water to the bean mixture, stirring continuously until it reaches a warm temperature, approximately 2-3 minutes.
4
Remove the bean mixture from the heat source and stir in a variety of seasonings, including soy sauce, chili powder, mustard, cumin, and cayenne pepper.
5
Divide the bean mixture evenly between warm tortillas. Add cheese on top of each tortilla and fold them into burrito-style wraps.
6
Place the folded tortillas on a baking sheet, leaving enough space between each one to allow for even cooking.
7
Bake the burritos in the preheated oven until they are warmed through, approximately 12 minutes.
