  • 2 pounds red potatoes, cut into evenly sized pieces
  • 1/2 large red bell pepper, seeded and cut into 1-inch pieces
  • 5 fresh thyme sprigs, or to taste
  • kosher salt and freshly ground black pepper to taste
  • 1 pinch cayenne pepper, or to taste

Begin by preheating the oven to 400 degrees Fahrenheit, or 200 degrees Celsius.

Next, pour a generous amount of olive oil into a substantial baking vessel, such as an enameled cast iron dish. Then, carefully place the potatoes into the baking dish and mix them with olive oil to coat evenly.

Add a variety of seasonings to the potatoes, including sliced red bell pepper, sprigs of fresh thyme, a pinch of kosher salt, black pepper, and a dash of cayenne pepper.

Place the potatoes in the preheated oven for 30 minutes, allowing them to roast and tenderize. After this initial baking time, use a spatula to gently turn the vegetables over, taking care not to disturb any potatoes that may be sticking to the dish.

Return the potatoes and vegetables to the oven for an additional 20 minutes, allowing them to continue roasting and browning.

Once again, use a spatula to turn the potatoes over, ensuring that any unbrowned sides are facing downwards and in contact with the bottom of the dish. Continue baking for an additional 15 minutes, or until the potatoes are nicely browned and tender.

After completing the final baking time, turn off the oven and allow the potatoes to remain in the oven for 15 minutes. Use a spatula to mix them one last time, before transferring them to a serving dish and seasoning with salt, black pepper, and cayenne pepper.
