- 2 tablespoons Madras curry powder, or to taste
- 1 teaspoon sea salt
- 3 large potatoes, cubed
- 3 large carrots, chopped
- 1 head cauliflower, cut into florets
- 1 (10 ounce) package frozen peas
- 2 tablespoons chopped fresh cilantro

First, preheat your oven to a hot temperature of 350 degrees Fahrenheit or 175 degrees Celsius.

To make the curry sauce, combine a small amount of oil with some curry powder and salt in a tiny bowl. Mix everything together until it's well combined.

Then, take two large bowls and combine the potatoes and carrots in one of them. Pour about two-thirds of the curry sauce over the top, making sure to coat everything evenly. Mix it all together.

Next, transfer the potato and carrot mixture to a large, rimmed baking sheet. This will be the base of your dish.

After that, put the baking sheet in a preheated oven and bake it for 30 minutes.

While that's baking, mix the cauliflower with the remaining curry sauce in a separate bowl. Add this mixture to the baking sheet.

Continue baking for another 20 minutes, until everything is cooked through.

Then, add some frozen peas to the baking sheet and bake for a few more minutes, until they're tender.
