- 1 (2 1/2 to 3 pound) skin-on, bone-in split turkey breast
- 1 tablespoon olive oil
- 2 1/2 teaspoons kosher salt
- 1 tablespoon freshly ground black pepper
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1/2 teaspoon dried oregano
- 1 teaspoon smoked paprika

Preheat your oven to 450 degrees Fahrenheit (230 degrees Celsius). Next, take a paper towel and gently pat the turkey breast to remove any excess moisture. Place the turkey into a suitable-sized baking dish, just large enough to accommodate it comfortably. Using a sharp, small knife, carefully prick the skin of the turkey breast all over to allow moisture to escape.

Then, drizzle a generous amount of olive oil over the turkey breast using tongs to evenly distribute it across all surfaces. You can also use a brush for this step, if preferred. Allow the turkey to rest for 15-20 minutes before proceeding.

While the turkey is resting, combine salt, pepper, thyme, rosemary, oregano, and paprika in a small bowl and mix until the spices are thoroughly blended together.

Using tongs, carefully lift the turkey breast with one hand and sprinkle the spice blend evenly over its entire surface, including the sides. Make sure to cover all areas thoroughly, finishing with the skin side facing upwards.

Add approximately 1/2 inch of water to the bottom of the baking dish, taking care not to overflow.

Place the prepared turkey breast in the center of the oven and immediately reduce the heat to 300 degrees Fahrenheit (150 degrees Celsius). Roast the turkey until a probe thermometer inserted into the center of its thickest part reads 150 degrees Fahrenheit (65 degrees C), approximately 1 hour and 15 minutes.

Once the turkey is cooked, let it cool before wrapping. Then, refrigerate it thoroughly for about 8 hours or overnight to allow the meat to chill completely. Finally, slice the turkey thinly and serve.
