  • 5 pounds pork roast, trimmed
  • 3 cloves garlic, sliced
  • 1 teaspoon salt
  • 1/2 tablespoon ground black pepper
  • 3 bay leaves
  • 1/2 cup cider vinegar
  • 1 teaspoon dried thyme

Preheat the oven to a moderate temperature of 325 degrees F (165 degrees C).

Carefully make a small incision in the top of the roast to allow for even penetration.

Add a few slices of garlic to the incision, ensuring they are evenly distributed and will cook thoroughly.

Sprinkle a pinch of salt and pepper over the roast to enhance flavor.

Place two or three bay leaves at the bottom of a roasting pan to add depth to the dish.

Position the roast, fat side facing upwards, on top of the bay leaves in the roasting pan.

Place the roast in the preheated oven and continue baking until it reaches an internal temperature of 145 degrees F (63 degrees C), approximately a period of three hours.
