Ingredients
- 1 cup chopped Chinese roast duck meat, skin and fat separated and set aside
- 1/2 cup thinly sliced Chinese barbecued pork
- 6 green onions, thinly sliced
- 2 tablespoons soy sauce
- 2 eggs, beaten
- 3 cups cooked long-grain rice
- salt and pepper to taste

Heat a wok or large skillet over medium heat, allowing the duck skin and fat to sizzle and crisp up, taking around 10 minutes. Raise the heat to medium-high, then add the duck meat, pork, half of the green onions, and soy sauce to the pan. Stir-fry until the meats are warm and fully incorporated, approximately 5 minutes.

Combine cooked rice with the pan contents to create a hot and sizzling mixture, taking around 5 minutes. Create a shallow depression in the center of the rice, exposing the bottom of the pan. Gently pour beaten eggs into this depression and stir until they're cooked to a scrambled state.

Combine the scrambled eggs with the rice, along with the remaining green onions. Continue to stir and toss until the entire mixture is very hot, taking around 5 minutes. Finally, season with salt and pepper to taste before serving.
