- 1/4 teaspoon ground cayenne pepper
- 1 1/2 teaspoons kosher salt
- 1 teaspoon black pepper

Preheat your oven to a high temperature of 425 degrees Fahrenheit (220 degrees Celsius).

Next, position a roasting rack inside a baking sheet lined with metal edges. Dry the chicken thoroughly using paper towels.

Extract 1 teaspoon of lemon zest and place it in a small container. Cut the remaining lemon into quarters, then insert these pieces along with an onion and garlic into the chicken's cavity.

Mix together mayonnaise, vinegar, honey, Worcestershire sauce, and cayenne pepper in a bowl. Combine these ingredients with the lemon zest to create a marinade.

Apply this marinade evenly across the entire surface of the chicken, including underneath the skin on the breast area. Sprinkle salt and pepper liberally across the chicken.

Place the prepared chicken in the preheated oven and roast until it reaches an internal temperature of 165 degrees Fahrenheit (74 degrees Celsius), as indicated by an instant-read thermometer inserted into the thickest part of the thigh. This should take around 50 to 60 minutes.
