  • 2 tablespoons lemon juice
  • 1 tablespoon lemon zest
  • 2 cups water
  • 2 tablespoons butter
  • 2 cups white sugar
  • 1/2 teaspoon ground cinnamon

Preheat the oven to its highest temperature setting, which is 425 degrees F (220 degrees C).

Unroll half of the pastry dough and place it into a 9 inch pie plate, making sure to cover the entire surface.

Arrange the crackers in a single layer within the prepared pastry crust.

In a saucepan, bring water to its boiling point, then add sugar and cream of tartar. Continue heating until the mixture reaches a rolling boil, after which reduce heat to medium-high and simmer for 15 minutes.

Add lemon juice and the grated lemon rind to the saucepan, stirring constantly until well combined. Remove from heat and let cool completely.
