Ingredients
- 1 pound lean ground beef
- salt and pepper to taste
- 3 (15 ounce) cans dark red kidney beans
- 3 (14.5 ounce) cans Mexican-style stewed tomatoes
- 2 stalks celery, chopped
- 1 red bell pepper, chopped
- 1/4 cup red wine vinegar
- 2 tablespoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon dried parsley
- 1 teaspoon dried basil
- 1 dash Worcestershire sauce
- 1/2 cup red wine
Instructions
1
Brown ground beef thoroughly in a large skillet over an elevated heat setting, 5 to 7 minutes. Remove excess fat from the pan, then add a pinch of seasoning salt and pepper to taste.
2
Transfer the browned ground beef to a slow cooker. Combine it with kidney beans, crushed tomatoes, chopped celery, sliced bell pepper, and a splash of vinegar. Add a blend of spices including chili powder, ground cumin, chopped fresh parsley, dried basil, and Worcestershire sauce. Mix the ingredients well to ensure uniform distribution.
3
Cook on a low setting for 8 hours or a high setting for 6 hours. Introduce a glass of wine towards the end of the cooking time, specifically during the last 2 hours.
