  • 1 (14.5 ounce) can chicken broth
  • 1/8 teaspoon salt
  • 1/8 teaspoon cayenne pepper
  • 1 1/2 cups half-and-half
  • 1/2 cup dry white wine
  • 1/2 pound cooked lump lobster meat

Heat the butter in a large saucepan over a relatively low heat setting. Add sliced mushrooms, chopped onion, diced celery, and grated carrot to the pan. Cook gently, stirring occasionally, until they become tender and soft in texture, which should take around 10 minutes.

Next, add the chicken broth to the saucepan and sprinkle some salt and a pinch of cayenne pepper for added flavor. Bring the mixture to a rolling boil, then reduce the heat and let it simmer for another 10 minutes.

Transfer the vegetable and broth mixture to a blender container, add one-quarter cup of lobster meat, cover it securely, and blend the mixture until it's smooth and well combined.

Return the blended mixture to the saucepan, stir in half-and-half, white wine, and the remaining lobster meat. Cook over very low heat, stirring constantly, until the mixture thickens to your liking, which should take around 30 minutes.
