Rich Chocolate Pudding
Ingredients
  • 8 ounces dark chocolate chips
  • 1 pinch salt
  • 1 pinch cayenne pepper
  • 6 large eggs
  • 1/3 cup white sugar
  • 1 cup whole milk
  • 1 1/4 cups heavy cream
  • 1/4 teaspoon vanilla extract
  • 1 tablespoon unsalted butter
  • 1/4 cup heavy cream, or to taste
  • 1/8 teaspoon vanilla extract, or to taste
  • 2 tablespoons shaved dark chocolate, or to taste
Instructions
1
Combine the ingredients of chocolate chips, salt, and cayenne pepper in a heat-resistant measuring cup.
2
Next, separate the eggs by cracking one egg into your palm over a bowl and gently rocking back and forth until the egg white falls into the bowl. Carefully pour the yolk into a saucepan and repeat with the remaining eggs.
3
Set aside the egg yolks and whisk together the sugar, milk, and cream in a separate bowl until well combined.
4
Heat a saucepan over medium or low heat on the stovetop and add the egg yolks. Stir constantly with a silicone spoon until the mixture becomes very hot and thick enough to coat the back of the spoon, approximately 5 minutes.
5
To check if it's ready, insert an instant-read thermometer into the mixture and wait for it to reach at least 175 degrees F (79 degrees C). Remove from heat.
6
Pour the reserved chocolate into a fine-mesh sieve over the bowl of custard sauce and let it sit for 2 minutes.
7
Once the chocolate has melted, whisk until smooth and shiny, about 2 minutes. Add vanilla extract and stir until the butter has melted, approximately 1 minute.
8
Pour the warm custard sauce into 6 serving glasses and tilt each glass to coat another half inch of the glass. Cover with plastic wrap and refrigerate until completely chilled, for at least 3 to 4 hours.
9
To create the topping, whisk together cream and vanilla extract in a metal bowl until thickened.
10
Spoon the whipped cream into the glasses and tilt them to coat the sides a bit.
11
Garnish with shaved chocolate and serve chilled.
