Rich Chicken Broth
Ingredients
  • 1 pound chicken parts
  • 1 large onion, quartered
  • 3 stalks celery ribs with leaves, cut into 1-inch pieces
  • 1 large carrot, cut into 1-inch chunks
  • 1 1/2 teaspoons salt
  • 3 whole cloves
  • 6 cups water
  • 1/4 cup cold water
  • 1 large egg

Combine chicken pieces, chopped onion, sliced celery, grated carrot, salt, and whole cloves in a large cooking vessel or heavy casserole dish. Add 6 cups of liquid to the pot and bring it to a rolling boil. Gradually decrease heat, cover the vessel, and let it simmer for 1 hour.

Carefully lift out the chicken pieces and vegetables from the pot. Use a fine-mesh strainer to separate the stock from any solids, discarding excess fat that rises to the surface.

If you want a clear soup, follow this additional step: Crack an egg into a separate container and reserve the shell. In another small bowl, combine 1/4 cup of cold water, egg white, and crushed eggshell. Add the mixture to the strained stock and bring it back to a boil. Remove from heat, allowing it to stand for 5 minutes. Strain the mixture once more through a fine-mesh sieve lined with cheesecloth
