- 3 cups white sugar
- 3 tablespoons grated lemon peel
- 1 1/2 cups lemon juice

Combine the tart rhubarb with a generous amount of sugar and finely grated lemon peel in a substantial saucepan; heat it up until the mixture reaches its boiling point.

Reduce the heat to a lower, more gentle flame; let it simmer for about 10 minutes, or until the sugar has fully incorporated and the rhubarb begins to release its natural juices and starts breaking apart.

Once removed from heat, gently stir in the freshly squeezed lemon juice.

Pour the rhubarb mixture through a fine-mesh sieve, taking care to press out as much liquid as possible from the solids.

Fill a glass with ice and then add 1 cup of water and 1/3 cup of the prepared syrup.
