- 8 cups water, divided
- 4 cups chopped rhubarb
- 3 family-size tea bags
- 4 fresh mint leaves
- 1 cup white sugar
- 3 tablespoons lemon juice
- ice cubes

Boil 4 cups of water in a large pot until it reaches its rolling point. Add the rhubarb, cover the pot with a lid, and continue to cook for 30 minutes. Remove the pot from the heat source.

Stir in tea bags and mint leaves into the cooked rhubarb mixture. Cover the pot again and let it sit for 30 minutes, allowing the flavors to meld.

In a separate container, mix together sugar and lemon juice until well combined. Strain the cooked rhubarb and tea mixture into this container, discarding the solids.

Using a wooden spoon, stir the tea-infused liquid until the sugar has fully dissolved. Add the remaining 4 cups of water to the pitcher and stir again, ensuring everything is well combined.
