Rhubarb Bread Pudding
Ingredients
  • 8 slices bread without crusts, toasted and cubed
  • 1 1/2 cups milk
  • 1/4 cup butter or margarine
  • 5 eggs
  • 1 1/4 cups white sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 2 cups diced rhubarb
  • 1/4 cup chopped walnuts
Instructions
1
Preheat your oven to a medium-high temperature, equivalent to 325 degrees F (or 165 degrees C).
2
Next, take a 2-quart baking dish and give it a light coating of non-stick spray to prevent the bread from sticking.
3
Add the bread cubes into the prepared baking dish, making sure they're evenly distributed.
4
In a separate saucepan, gently heat the milk and butter over medium heat until it reaches a rolling boil.
5
Pour the hot milk mixture over the bread cubes in the baking dish, allowing them to absorb the liquid for 15 minutes.
6
In a separate bowl, whisk together eggs, sugar, cinnamon, and salt until well combined.
7
Add the rhubarb to the bowl with the egg mixture and stir until it's fully incorporated.
8
Pour the egg-rhubarb mixture over the bread cubes in the baking dish, gently stirring until everything is well combined.
9
Sprinkle a handful of chopped walnuts over the top of the bread mixture for added texture and flavor.
10
Place the baking dish in the preheated oven and bake until the top is nicely browned, approximately 50 minutes.
11
Once done, remove the dish from the oven and let it stand for 10 minutes before serving.
