Ingredients
- 1 1/2 cups thousand island dressing
- 1 cup sour cream
- 1 tablespoon minced onion
- 6 slices dark rye bread, cubed
- 6 slices light rye bread, cubed
- 1 1/2 pounds corn beef, cut into bite-size pieces
- 1 pound sauerkraut, drained
- 2 1/2 cups shredded Swiss cheese
- 1/4 cup margarine, melted
Instructions
1
Preheat your oven to the desired temperature of 350 degrees F (175 degrees C).
2
Next, lightly coat a 9x13-inch baking dish with a thin layer of oil or cooking spray to prevent the bread from sticking.
3
Mix together Thousand island dressing, sour cream, and finely chopped onion in a medium-sized bowl until the ingredients are fully incorporated.
4
Layer dark and light rye bread cubes in a single layer at the bottom of the prepared baking dish, setting aside approximately half a cup of bread for later use.
5
Add thinly sliced corned beef and tangy sauerkraut on top of the bread layer, followed by a smooth and even layer of dressing mixture.
6
Finish the dish off with a sprinkle of Swiss cheese, followed by the reserved bread cubes, and a drizzle of melted margarine.
7
Bake the dish covered in the preheated oven for 15 minutes.
8
After 15 minutes, remove the cover and continue baking until the dish is bubbly and lightly browned, requiring an additional 10 minutes of cooking time.
