Refreshing Raspberry Sorbet

  • 4 (6 ounce) containers fresh red raspberries
  • 1/2 cup honey
  • 4 cups water, divided
  • 3/4 cup white sugar
  • 1/2 cup light corn syrup

Start by placing the raspberries in the bowl of a food processor and blending them until they're completely broken down and smooth. If you want an even smoother sorbet, use a fine-mesh strainer to strain the puree and remove any seeds.

Next, whisk together the smooth raspberry puree and honey in a large bowl until well combined.

In another pot, combine 3 cups of water, sugar, and corn syrup. Mix everything together until it's fully incorporated. Then, bring the mixture to a boil over high heat and let it simmer for about 2 minutes, without stirring or disturbing the pot.

Once the sugar has dissolved, stir in the remaining 1 cup of water and the raspberry puree.

To chill the mixture, fill a very large bowl with ice and water to create an ice bath. Carefully place the bowl of raspberry puree into the ice bath and whisk it until it's cool to the touch.

Finally, pour the cooled puree into a 9x13-inch baking dish and cover it. Freeze the mixture until it's solid, which should take around 6 to 8 hours.

If you want a coarsely textured granita, use a fork to scrape the frozen puree into small pieces. On the other hand, if you want a silky sorbet, transfer the frozen puree to a food processor and blend it until smooth.
