Ingredients
- 1 gallon water
- 1 (15 ounce) package dried purple corn (maiz morado)
- 2 cinnamon sticks
- 1 tablespoon whole cloves
- 5 large lemons, juiced
- 1 1/2 cups brown sugar
- 1/2 cup fresh pineapple, chopped
- 1/2 apple, chopped

Boil water with corn, cinnamon sticks, and cloves in a large pot. Lower the heat to a lower medium setting; continue to cook for 40 minutes. Take the pot off the heat source and pass the mixture through a fine-mesh sieve to separate the corn and spices. Combine lemon juice and sugar in the chicha, stirring until the sugar is fully incorporated. Chill the mixture in the refrigerator until it has reached a cold temperature.

Add chopped pineapple and apple to the chicha, stirring gently before serving over ice.
