  • 4 (1/4 inch thick) slices ham
  • salt and freshly ground black pepper to taste
  • 1/8 teaspoon cayenne pepper, or to taste
  • 1 teaspoon all-purpose flour
  • 2/3 cup brewed coffee

Preheat a medium-sized skillet over a moderate temperature setting. \nMelt oil in the skillet and cook ham fragments until they acquire a golden color, approximately 5 minutes. Transfer to a plate, retaining the pan's residual oil.\nArrange ham slices in the skillet and cook over a moderate temperature setting until they turn brown, about 5 minutes on each side. Add a pinch of salt, black pepper, and cayenne pepper to both sides of the ham for flavor enhancement. Move the ham to a separate plate, leaving it aside.\nLower the heat to a lower temperature setting and sprinkle flour over the remaining pan drippings. Cook and stir for 2 minutes, allowing the mixture to thicken. Boost the heat to a higher temperature setting and pour coffee into the pan, stirring constantly until combined.\nSeason with salt to taste.
