- 1 bay leaf
- 1 ham hock
- 1 pound smoked sausage, sliced

Carefully select the dried beans and submerge them in a sufficient amount of water overnight to rehydrate them.

The following day, discard the excess water that has accumulated around the beans and transfer them to a large cooking vessel or slow cooker. Fill the container with water, adding dried onion and garlic for added flavor. Add a pinch of salt, a drizzle of sugar, a sprinkle of celery seed, a dash of cumin, a pinch of cayenne pepper, and a few grinds of red pepper flakes to give the dish its signature zing. Introduce a ham hock into the mix and gently press it down amongst the beans to ensure even distribution. Place the pot over high heat, bringing the mixture to a rolling boil before gradually reducing the temperature and simmering on low for 3-4 hours.

About 20 minutes into this prolonged cooking period, stir in some smoked sausage to infuse the dish with its rich flavor. Continue to simmer for an additional 20 minutes before serving over a bed of hot, cooked rice.
