Ingredients
- 1 cup butter
- 2/3 cup white sugar
- 2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1 tablespoon vanilla sugar
- 16 teaspoons raspberry jam, divided
Instructions
1
Preheat your oven to a medium-high temperature of 350 degrees Fahrenheit (or the equivalent in Celsius, 175 degrees).
2
Next, prepare your muffin tin by lining it with paper cups designed specifically for muffins. This will make removal and serving easier.
3
In a large mixing bowl, combine the softened butter and granulated sugar using an electric mixer. Continue blending until you achieve a smooth, creamy consistency.
4
Add the all-purpose flour, vanilla sugar substitute, and baking powder to the mixing bowl. Mix until these ingredients are fully incorporated into your dough.
5
Divide your dough evenly in half, then further divide each half into 8 equal portions. Shape each portion into a round ball.
6
Place one of these dough balls into each muffin cup, making sure to fill the entire cup. Create a small depression in the center of each dough ball by pressing down on it with your thumb, coating it lightly with flour to prevent sticking.
7
Add a small amount of raspberry jam - approximately one teaspoon per muffin - to the depression in each dough ball.
8
Finally, bake your muffins in a preheated oven for 20 minutes, or until they are lightly golden brown.
