  • salt and ground black pepper to taste
  • 4 tablespoons vegetable oil
  • 2 corn tortillas
  • 2 eggs
  • 4 tablespoons refried beans

Boil a large container of water until it reaches its maximum temperature. Prepare the vegetables by cooking tomato, serrano chile, and garlic in boiling water for 5 minutes. Remove from heat, let sit for a moment, then peel the tomato.

Combine the cooked vegetables with salt and pepper in a food processor; process until a uniform consistency is achieved.

Heat oil in a small pan over extremely high heat. Cook tortillas one at a time until they become soft and pliable, approximately 10 seconds. Place on a serving plate. Lower the heat to a moderate level. Pour eggs into the pan and cook until they reach your preferred doneness, about 3 to 5 minutes.
