Ranch Bacon Chicken Enchiladas
Ingredients
  • cooking spray
  • 2 tablespoons olive oil
  • 1/4 cup chopped yellow onion
  • 1/2 leftover rotisserie chicken, chopped
  • 1/4 cup crumbled cooked bacon
  • 2 tablespoons roasted garlic
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon garlic powder
  • 1 bunch green onions, chopped
  • 2 tablespoons ranch dressing
  • 2 tablespoons sour cream
  • 15 (6 inch) corn tortillas, or more to taste
  • 2 cups shredded Cheddar-Monterey Jack cheese blend
  • 1 cup mild enchilada sauce
Instructions
1
Preheat your oven to a high temperature of 450 degrees Fahrenheit (230 degrees Celsius).
2
Spray a standard-sized brownie pan measuring 9x12 inches with cooking spray to prevent sticking.
3
Heat a substantial amount of olive oil in a large, deep skillet over medium heat. Add sliced onions and cook until they become soft and translucent, approximately 5 minutes.
4
Add diced chicken, crispy bacon, and roasted garlic to the skillet and stir until well combined. Season with salt, pepper, and a pinch of garlic powder to enhance flavor.
5
Add chopped green onions to the skillet and stir until they're evenly distributed throughout the mixture.
6
Mix a small amount of ranch dressing with sour cream in a separate, compact bowl. Remove the chicken mixture from heat and stir just enough of the ranch dressing into the skillet to coat the chicken lightly.
7
Take a single tortilla and place 2 tablespoons of the chicken mixture in the center. Sprinkle 1 tablespoon of Cheddar-Monterey Jack cheese blend over the chicken, then roll the tortilla up tightly.
8
Place the rolled tortilla seam-side down against the short end of the pan, ensuring it remains in place. Repeat this process with the remaining tortillas and filling until the entire pan is filled to capacity.
9
Pour a generous amount of enchilada sauce over the filled tortillas, covering them without overflowing.
10
Sprinkle any remaining Cheddar-Monterey Jack cheese blend over the top of everything.
11
Place the filled pan in the preheated oven and bake until bubbly on top, approximately 15 minutes.
