Ingredients
- 3/4 cup all-purpose flour
- 1/4 teaspoon salt
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1/2 cup white sugar
- 1/4 cup vegetable oil
- 1 large egg
- 1 cup grated zucchini
- 1/4 cup raisins
Instructions
1
Preheat your oven to the optimal temperature of 350 degrees Fahrenheit (or 175 degrees Celsius, if you prefer metric).
2
Next, take a 12-cup muffin tin and line it with paper inserts to ensure easy removal of the baked goods.
3
Mix together flour, salt, nutmeg, baking soda, and baking powder in a bowl until well combined.
4
In a large mixing vessel, use an electric mixer to cream together sugar, vegetable oil, and egg until smooth.
5
Add zucchini and raisins to the mixture and gently fold them in, followed by the flour mixture until everything is well incorporated.
6
Spoon the batter into each of the prepared muffin cups, filling them about 2/3 full.
7
Place the muffins in the preheated oven and bake until they are golden brown and the tops spring back when gently pressed, approximately 25 minutes.
