  • 2 cups water
  • 1/2 cup packed brown sugar
  • 2 tablespoons cornstarch
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 tablespoon distilled white vinegar
  • 1 tablespoon butter
  • 1 (14.1 ounce) package double-crust pie pastry, thawed

Preheat the oven to its highest temperature setting, which is 425 degrees F (220 degrees C).

In a small saucepan, combine the dried fruit and water. Bring to a boil for 5 minutes.

Mix together the granulated sugar, cornstarch, ground cinnamon, and a pinch of salt in a bowl. Gradually add this mixture to the boiling raisin mixture, stirring constantly until the syrup becomes transparent. Take the saucepan off the heat source and stir in some white vinegar and melted butter. Allow it to cool slightly.

Transfer the filling mixture into a pie dish lined with pastry dough. Cover it with another layer of pastry dough to form the top crust. Seal the edges by pressing them firmly together and make a few small holes in the top crust using a fork.
