Quinoa Parsley Salad

  • 2 cups water
  • 1 cup quinoa
  • 1 pinch salt
  • 1/4 cup olive oil
  • 1/2 teaspoon sea salt
  • 1/4 cup lemon juice
  • 3 tomatoes, diced
  • 1 cucumber, diced
  • 2 bunches green onions, diced
  • 2 carrots, grated
  • 1 cup chopped fresh parsley

Begin by placing water on the stovetop and bringing it to a rolling boil in a medium-sized saucepan. Next, add the quinoa and a small amount of salt to the pan, stirring gently to combine.

Once the quinoa is submerged in water and heated through, decrease the heat to a low setting and cover the saucepan with a lid. Allow it to cook, undisturbed, for 15 minutes, or until the quinoa is tender and fluffy.

After the cooking time has elapsed, remove the saucepan from the heat source and let it cool to a comfortable temperature.

While the quinoa is cooling, prepare the salad ingredients in a large bowl by combining olive oil, sea salt, freshly squeezed lemon juice, diced tomatoes, sliced cucumber, chopped green onions, grated carrots, and chopped parsley.

Once the quinoa has cooled to room temperature, fluff it with a fork to separate the grains and restore its natural texture.
