Combine all-purpose flour, whole wheat flour, brown sugar, instant yeast, and salt in the bowl of an electric mixer equipped with a dough hook attachment. Mix these dry ingredients together until they form a uniform blend.

Next, combine water and oil in a separate container; pour the liquid mixture into the flour mixture. Gradually incorporate the liquids, stirring until a cohesive dough forms and pulls away from the sides of the bowl.

Transfer the dough to a lightly dusted surface; knead it until it becomes smooth and even, taking approximately 1 minute to achieve this.

Divide the dough into three equal portions for small loaves or two portions for larger loaves. Shape each portion into a ball and dust them lightly with flour.
