  • 1/2 cup diced onion
  • 2 tablespoons taco seasoning
  • 1 (8 ounce) can tomato sauce
  • 1 cup chicken broth
  • 1/2 (15.25 ounce) can corn, drained
  • 1/2 (15 ounce) can black beans, rinsed and drained
  • 1/2 (5.6 ounce) package Spanish rice mix (such as KnorrĀ®)
  • 1/4 cup salsa

  • 1/2 cup shredded sharp Cheddar cheese

Begin by preheating your oven to a high temperature of 350 degrees Fahrenheit (or, equivalently, 175 degrees Celsius).

Next, heat a large skillet over a medium-high flame. Cook and stir ground beef until it reaches a dark brown color, breaking up the meat with a spoon as you go. This should take around 6 minutes. Remove any excess fat from the skillet.

Add a small amount of butter and sliced onion to the skillet. Cook over medium-high heat, stirring occasionally, until the onion is softened and fragrant, taking about 5 minutes. Introduce a packet of taco seasoning into the skillet and pour in a can of tomato sauce. Stir everything together to create a uniform mixture.

Add a cup of broth, a can of corn, a can of black beans, a packet of Spanish rice mix, and a spoonful of salsa to the skillet. Mix all the ingredients together until they're well combined.

Prepare a large casserole dish by spraying it with non-stick cooking spray. Pour the beef mixture into the casserole dish.
