Ingredients
- 1 tablespoon butter
- 1/2 pound ground beef
- 1/2 cup chopped onion
- 1 (15.25 ounce) can whole kernel corn, drained
- 1 (14.5 ounce) can diced tomatoes
- 1/4 cup vegetable oil
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1 cup milk
- 1/2 cup yellow cornmeal
- 2 eggs
- 1 (6 ounce) can black olives, drained
Instructions
1
Preheat your oven to 350 degrees Fahrenheit (or 175 degrees Celsius, if you prefer metric).
2
Next, take a baking or casserole dish that measures 8 inches in diameter and grease it with butter.
3
In a large skillet, heat the pan over medium-high heat. Add ground beef and an onion to it and cook until the meat is nicely browned, breaking it apart with a spoon as it cooks. This should take about 5 to 7 minutes.
4
Meanwhile, combine the cooked meat mixture with corn, tomatoes, oil, chili powder, and cumin in a separate bowl. Stir well to combine.
5
In another large bowl, whisk together milk, cornmeal, and eggs until smooth. Add the meat mixture to this bowl and stir until everything is fully incorporated.
6
Finally, add some chopped olives to the mixture and pour it into your prepared baking dish.
7
Bake the dish in your preheated oven for 50 to 60 minutes, or until it's golden brown and set. Make sure the mixture isn't mushy when you take it out of the oven.
