Ingredients
- 8 cups water
- 1 pound dried split peas
- 1 ham hock
- 1 onion, diced
- 2 stalks celery, diced
- 1 teaspoon dried thyme
- 1/8 teaspoon garlic powder
- 1 pinch ground black pepper
- 1 teaspoon salt
- 1 teaspoon hot pepper sauce (such as Tabasco®)
Instructions
1
Fill a pressure cooker with water, then add the split peas, ham hock, onion, celery, thyme, garlic powder, and black pepper. Secure the lid tightly and position the pressure regulator over the vent as directed by the manufacturer's guidelines. Subject the cooker to high pressure; adjust the heat setting until the regulator is moving in a gentle, rocking motion. Cook for approximately 30 minutes.
2
Once cooking time has elapsed, carefully pour cold water over the pressure cooker to release any remaining pressure as instructed by the manufacturer's guidelines.
3
Next, remove the ham hock from the cooker and carefully strip off its meat. Add this to your soup, stirring well to distribute the flavors evenly. Finally, season with salt and a dash of hot pepper sauce to enhance the overall taste.
