- 2 1/2 tablespoons butter
- 1/2 cup chopped carrots
- 1/2 cup chopped scallions
- 1 clove garlic, minced
- 6 cups chicken broth
- 1/2 cup orzo
- 1 (10 ounce) bag fresh spinach, chopped
- salt and ground black pepper to taste

Heat a large stockpot over medium heat, allowing the butter to soften and melt. Introduce the carrots, scallions, and garlic into the pot; continue to cook and stir until the scallions have become tender and slightly softened, approximately 1-2 minutes.

Next, pour in the chicken broth, causing it to rapidly come to a boil within the stockpot.

Now, add the pasta and continue cooking, occasionally stirring the mixture to ensure even cooking. The pasta should remain slightly firm in the center, but tender overall, taking anywhere from 5-10 minutes to achieve this.

Following this, stir in the spinach and allow it to cook until fully tender, adding an additional 2-3 minutes to the overall cooking time.
