  • 1 pound boneless, skinless chicken breast, cut into strips
  • 1 red bell pepper, cubed
  • 1 bunch scallions, trimmed and sliced into 1/2-inch lengths
  • 1 (12 ounce) can pineapple chunks, drained and juice reserved
  • 1 tablespoon cornstarch

Combine 2 tablespoons of olive oil, paprika, and salt in a bowl. Add the chicken strips to this mixture and let them sit while you prepare the rest of the ingredients.

Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat. Add the sliced bell pepper and stir-fry for 3 minutes, ensuring it's tender but still crisp.

Next, add the chopped scallions to the skillet and cook for an additional 2 minutes, allowing their flavors to meld with the other ingredients.

Take the chicken strips out of the marinade and add them to the skillet; discard the leftover marinade. Cook, stirring occasionally, until the chicken is fully cooked through and no longer pink in the center, taking around 10 to 15 minutes.
