Quick One-Pot Fajitas
Ingredients
  • 2 cups chicken stock, divided
  • 3 cups chopped assorted bell peppers, such as yellow, green and red
  • 1 onion, diced
  • 1 (15 ounce) can reduced sodium black beans, drained
  • 1 (5.4 ounce) package KnorrĀ® Fiesta Sidesā„¢ - Mexican Rice or Spanish Rice
  • 2 cooked chicken breasts (skin and bones removed), sliced into strips
  • 1 (8 ounce) package shredded Cheddar cheese
  • 10 flour tortillas

Start by adding 1/4 cup of broth to a large cooking vessel with a lid; heat it up until it reaches a gentle boil. Introduce the peppers and onions into the pan, then let them soften for about 3 minutes. Next, add the black beans and continue to simmer for another 2 minutes. At this point, pour in the remaining broth into the pan and stir in a packet of Knorr Fiesta Rice Mexican Rice seasoning. Cover the pan and let it simmer for 5 minutes, stirring occasionally.

Now, add sliced chicken to the pan and gently mix it with the sauce. Continue cooking until the rice is fully cooked, which should take an additional 2 to 5 minutes. To prevent the rice from sticking to the pan, stir it lightly during this time.

To assemble your dish, place a warm tortilla on a plate and sprinkle some cheese over it. Add slices of chicken, rice, and pepper mixture on top, followed by a layer of cheese. Roll up the tortilla to create a delicious and easy snack or meal!
