Quick Mexican Quinoa
Ingredients
  • 2 cups water
  • 1 cup quinoa
  • 1 (12 ounce) package frozen corn and black bean vegetable blend (such as Archer FarmsĀ®)

Begin by placing water and quinoa in a saucepan over high heat, bringing them to a rolling boil. Next, decrease the heat to a lower setting and cover the saucepan with a lid. Continue cooking until the quinoa is fully cooked and has absorbed all of the water, typically taking 15 to 20 minutes.

In a separate microwave-safe container, combine the vegetable blend and heat it in short intervals until it reaches your desired level of warmth. This should take approximately 5 minutes, at which point you can stir the vegetable blend into the cooked quinoa.
