Quick Japanese Fried Rice
Ingredients
  • 2 cups jasmine rice
  • 2 cups chicken stock
  • 1 1/2 cups water
  • 4 tablespoons butter, divided, or more to taste
  • 2 tablespoons vegetable oil
  • 2 large eggs, beaten
  • 3 tablespoons sesame seeds, or to taste
  • 2 tablespoons soy sauce (such as Kikkoman®), or to taste
  • 1/8 teaspoon salt
  • 1/8 teaspoon ground black pepper

Combine rice, chicken stock, and water in a medium-sized cooking vessel; heat until it reaches boiling point. Decrease the temperature to low, cover it with a lid, and let it cook until the rice is soft and the liquid has been fully absorbed, taking around 15 to 20 minutes. Take it off the heat source, stir in 2 tablespoons of melted butter, and allow it to cool down to room temperature, approximately 30 minutes later.

Heat a small amount of oil in a skillet over medium heat. Introduce beaten eggs into the skillet and scramble, stirring constantly to break down the egg into tiny pieces using a spatula.

Transfer cooked rice to a large mixing container. Add the scrambled eggs and mix with the rice until everything is well combined.

Melt the remaining 2 tablespoons of butter in a large frying pan over medium-high heat. Pour the rice mixture into the hot pan and add sesame seeds, soy sauce, salt, and pepper. Cook, stirring frequently, for 8 minutes. Taste and adjust the seasoning as needed by adding more butter or soy sauce if desired. Serve hot
