Quick Instant Pot Baked Beans
Ingredients
  • 8 cups water
  • 1 pound dry navy beans, rinsed and picked through
  • 1 tablespoon olive oil
  • 6 ounces salt pork, diced
  • 6 ounces bacon, cut into small pieces
  • 1 small onion, minced
  • 1 1/2 cups water, divided
  • 1/3 cup molasses
  • 1/4 cup ketchup
  • 1/4 cup brown sugar
  • 1 tablespoon yellow mustard

Combine water and beans in a pressure cooker designed to handle multiple tasks, such as an Instant Pot. Close the lid and secure it firmly in place.

Follow the manufacturer's guidelines for selecting high pressure; set the timer according to their instructions, 15 minutes. Allow a period of time for the pressure to build up, about 10-15 minutes.

Release the built-up pressure using the natural-release method as advised by the manufacturer, approximately 20 minutes; proceed with quick-release for any remaining pressure according to their directions. Unlock and carefully remove the lid. Drain and rinse the beans with cold water, then set them aside for a moment.

Rinse the Instant Pot insert thoroughly and put it back into its pressure cooker configuration. Engage the Instant Pot's heating function and select the sauté option.

Heat olive oil in the pot until it starts to shimmer, taking about 2-3 minutes. Add salt pork, bacon, and onion; cook until the fat begins to melt and render, 1-2 minutes. Pour in half a cup of water and scrape off any browned residue from the bottom of the pot. Switch off the Instant Pot.

In a small bowl, whisk together molasses, ketchup, brown sugar, mustard, and the remaining half cup of water until well combined. Return the cooked beans to the pot along with the ketchup mixture. Gently stir everything together. Close the lid and secure it firmly in place.
