- 3 (15 ounce) cans black-eyed peas, rinsed and drained
- 2 (10.75 ounce) cans low sodium chicken stock
- 1 cup water
- 1/2 teaspoon cayenne pepper, or to taste
- 2 cups uncooked instant rice

Heat a large saucepan over medium heat and add the sausage and onion, cooking and stirring constantly until they start to develop a rich brown color, approximately 10 minutes.

Next, add the black-eyed peas, chicken stock, water, and a pinch of cayenne pepper to the saucepan, stirring well to combine. Bring the mixture to a rolling boil before adding the rice and covering the saucepan.

Now, cook the rice mixture over low heat, stirring occasionally, until it reaches a tender consistency, taking around 20 to 25 minutes.
