Quick Grilled Baby Back Ribs
Ingredients
  • 1 cup mesquite chips, soaked
  • 1 (2 pound) slab baby back pork ribs
  • 1 teaspoon salt
  • 1 teaspoon freshly ground pepper
  • 1 teaspoon Hungarian paprika
  • 1 teaspoon ancho chile powder
  • 1/2 teaspoon ground thyme
  • 1 cup barbeque sauce
Instructions
1
Prepare the outdoor grill by setting up an indirect heat configuration, where a mound of charcoal is situated on one side and the food will be placed away from the heat source. This allows for a gentle, even cooking process. To enhance the smoky flavor, sprinkle soaked mesquite wood chips over the glowing charcoal embers.
2
Next, remove the membrane from the ribs to expose the tender meat underneath. In a small bowl, mix together salt, pepper, paprika, chile powder, and thyme to create a dry rub. Apply this mixture evenly to the ribs, making sure they are well-coated.
3
Cut the slab of ribs in half lengthwise to facilitate even cooking. Place the cut ribs over the indirect heat, ensuring they are not in direct contact with the flames. Close the lid to trap the heat and allow the ribs to cook for 20 minutes.
4
After 20 minutes, brush the ribs with a rich barbeque sauce to add a sweet and tangy flavor. Cover the grill once again, allowing the ribs to continue cooking for an additional 30 minutes.
